There are many ways to use pecans in dishes we normally make. Especially for setting a holiday table. There is no better or healthier way we know of to garnish or enhance a dish than with pecans.
One of our fast, easy favorites for snacking is to roast and salt pecans. There are a couple of ways to accomplish this and we are going to share our two favorites with you.
The first method is as follows:
Preheat your oven to 250 degrees.
You will need:
4 Tablespoons margarine
1 lb. of B & B Pecans
Salt or seasoning of your choice
In a heavy skillet (we prefer an iron skillet), melt your margarine. Add pecans and stir until coated. Place the skillet in the preheated oven for 45 to 60 minutes, stirring occasionally.
Remove skillet from the oven and sprinkle the pecans with salt or your choice of seasonings. Pour on to absorbent paper to cool. Pecans will crisp as they cool.
An alternate method is to preheat your oven to 400 degrees.
Choose what seasonings you want on your pecans. Using a small amount of cooking oil (any of your choice will do, including butter or margarine. We prefer pecan oil. You can find this in the oil selection on our main page.) Stir the seasonings and pecans together in a bowl until the oil and seasonings are well distributed.
Place your B & B pecans on a parchment paper lined cookie sheet. Spread out the pecans so that they do not stack on top of each other.
Put them into the preheated oven. TURN THE OVEN OFF. (This is VERY IMPORTANT.)
Leave them in the oven for 4 hours or overnight. Do not give in to the temptation of opening the oven.
You do not have to babysit the pecans using this method, which makes it very convenient.
Whichever method you chose to use, store the cooled pecans in air tight containers and refrigerate if not used right away.

Next we will share the best pecan pie recipe we have found. We call it Sandra's Classic Pecan Pie Recipe.
You will need:
3 beaten eggs
1 cup Karo syrup (light or dark)
1 cup sugar
2 Tablespoons melted margarine
2 Tablespoons flour
1/2 teaspoon vanilla
pinch of salt
1 cup chopped B & B Pecans
1 unbaked 9" pie shell
Mix together all ingredients except the pecans. Place the pecans in a 9", unbaked pie shell. Cover with the syrup mixture.
Bake for 10 minutes at 425 degrees. Reduce heat to 325 degrees for 30 minutes or until a knife comes out clean. Cool before cutting.
